  1. 60mls (1/4 cup) olive oil
  2. 2 tablespoons fresh lemon juice
  3. 2 cloves of garlic, crushed
  4. 1/2 teaspoon cracked black pepper
  5. 350 g firm tofu, cut into lcm-thick slices, cut in two
  6. 8 (500g) egg tomatoes, halved
  7. 1 tablespoon of capers, rinsed, drained
  8. 1 cup (160 g) black olives
  9. 1/4 cup of persil fresh, Continental persil
  10. 1 small red onion, chopped
  11. 150g spinach leaves, washed, drained

  1. Combine the olive oil, lemon juice, and garlic in a large bowl. Add the cracked black pepper and the tofu, cover, and let marinate at room temperature for about 30 minutes.
  2. Preheat a chargrill on medium-high. Drain the tofu and reserve the marinade.
  3. Place half of the tofu on the preheated chargrill and baste with the marinade. Cook for 1 minute, turn the tofu, brush with a little more of the marinade and cook for a further 1 minute. Remove the tofu from the chargrill and place in a large bowl. Repeat with the remaining tofu.
  4. Place the tomatoes, cut-side down, on the chargrill and cook over medium-high heat for 1 minute or until just heated. Add the tomatoes, capers, olives, persil, onion, and spinach to the tofu in the bowl and mix gently with the rest of the marinade to the combine.
