  1. 8 pickling onions, peeled, leaving the roots and tops intact, cut in two
  2. 1/4 cup (40 g) raisins
  3. 3/4 cup (180 ml) red wine vinegar
  4. 2 tablespoons light brown sugar
  5. 1 radicchio of Treviso, cut into 2cm-thick slices
  6. Extra virgin olive oil, to serve

  1. Place the onion, raisins, vinegar and sugar in a stainless steel saucepan and bring to a boil over medium heat. Reduce the heat to low-medium and cook, turning the onions occasionally, for 20 minutes or until the onions are tender and vinegar is reduced.
  2. Layer on a platter with the radicchio. Drizzle with the cooking juices and the oil. Season to taste. To serve.
