The ingredient of Caramel slice (vegan)

  1. 90 g (1 cup) rolled oats
  2. 30g of roasted almonds
  3. 60g fresh dates, pitted, chopped
  4. 2 tablespoons of coconut oil
  5. 2 tablespoons of light coconut milk
  6. 1 tablespoon of rice malt syrup
  7. Sea salt flakes, to serve (optional)
  8. 145g (1 cup) cashew nuts
  9. 200g fresh dates, pitted, chopped
  10. 60 ml (1/4 cup) light coconut milk
  11. 2 tablespoons of coconut oil
  12. 2 tablespoons of rice malt syrup
  13. Pinch of sea salt flakes
  14. 50 g (1/2 cup) raw cacao powder, sifted
  15. 80ml (1/3 cup) of coconut oil
  16. 150 ml syrup rice malt

The instruction how to make Caramel slice (vegan)

  1. For the filling, place the cashews in a glass or ceramic bowl and cover with cold water. Rest for 2 hours. Drain well.
  2. Preheat the oven to 180 u00b0 c/160 fan forced. Cover a baking sheet with parchment paper. Grease and line the bottom and sides of a 16 x 26cm (base measurement) slice pan. Spread the oats on the prepared tray. Cook, stirring halfway, for 6 minutes or until golden and fragrant. Process oats and almonds until coarsely chopped. Add the dates, oil, milk and rice malt syrup. Process until a sticky mixture forms. Press into prepared pan. Bake in the oven for 8 minutes or until firm. Allow to cool completely.
  3. Process the cashews until finely chopped. Add the dates and coconut milk. Well, scraping the sides occasionally, until well combined. Add the oil, syrup, rice malt and salt. Process until smooth. Spread over prepared base. Use a spatula to smooth the surface. Place in the freezer for 1 hour or until firm.
  4. For the chocolate topping, place all ingredients in a bowl resistant to heat, put on a saucepan of simmering water (do not let the bowl touch the water). Cook, stirring constantly, for 4 minutes or until the mixture thickens and comes to. Pour over the filling. Smooth out the surface. Place in refrigerator for 6 hours or overnight to set. Use a sharp knife to cut into 24 squares. Sprinkle with sea salt, if you use it.
